Based on the standard bloomer sizes, 400g and 800g with a 'secret' paste.

Also Tiger rolls (Vienna), Round Rolls, Batons and Baguettes.

Tiger Breads

A selection of breads with a reasonable QPIG finish.

Note that the Tiger Viennas have been put through the roll plant. Viennas, plain, multi-seeded or pasted, are meant to be baguette cut into sections. They should have square ends and should not be batched together.

Tiger rolls are at the bottom of this rack on silicon paper.

They will bake on a mixed rack but the paste must be fully proved for the finish to be correct.

1k Taiger Bloomers on tipping / cooling rack

Make sure that when the baked Tigers are tipped they are not in fact 'tipped' but handed or slid off onto the bases so that the crust is not damaged.

No bloomer style loaves should be cooled on the baking trays on the racks. The reason is that in proving the base of the dough sometimes expands into the holes in the tray. These 'pimples' then bake and, when cool, stick into the tray. Trying to remove the loaf more than often means that the bottom crust will be torn, perhaps a patch taken out. This is a QPIG failure. This is particulary true of tiger bloomers. If the paste is too damp or if the loaf is pasted too low down the side of the dough then paste gets into the holes, bakes in that position and locks the tiger loaf onto the tray.

Detraying by sliding onto the cooling rack while the dough is still hot so that the full loaf is released.

One should not see packers attempting to remove bloomers from trays with a blade!
