Skills: Baking Mince Pies

Mince pies can be difficult. They must be baked at the correct settings and be careful of leaving in particular the puff paste mince pies in over-long as they will burn easily.

QPIG allows some splitting and filling to show but requires the bases to be completely baked off. Check the bases on each batch and give longer if needed.

Managers Note: Bakers and confectioners often forget to dust the short crust pies with sugar as soon as they are out of the oven. Doing so when they are cooler means that the sugar does not 'take' and more will be used to the same efffect.
